Ingredients

  • 4 servings instant grits
  • 1 can chicken broth
  • 1 Tbsp dry wine
  • salt and pepper to taste
  • 1 tsp ground red pepper
  • 1 pkg frozen chopped spinach
  • 1 c grated Parmesan cheese
  • 1 c fat-free Cheddar cheese
  • 1 1/4 c prepared barbecue sauce
  • 1 1/4 c water
  • 2 tsp dried thyme
  • 1 1/2 tsp chicken bouillon
  • 1 1/3 lb potatoes

Instructions

  1. In a large saute pan, combine all ingredients except potatoes and bring to a boil.
  2. Add potatoes; cover and simmer for 20 to 25 minutes until tender, stirring occasionally.
  3. Serve hot.
