Creamy spinach stuffed shells feature tender pasta filled with a cheesy spinach mixture, perfect for a comforting vegetarian main dish or impressive family dinner.

Ingredients

  • 1 lb. fresh spinach
  • 1 Tbsp. butter
  • 2/3 c. Ricotta cheese
  • 1/2 c. Parmesan cheese
  • 1 Tbsp. chopped onion
  • 1 egg, beaten
  • 1/8 tsp. nutmeg
  • 20 jumbo shells

Instructions

  1. Simmer spinach for 3 to 5 minutes.
  2. Drain well and chop.
  3. Cook onion in butter until tender.
  4. Add spinach and heat.
  5. Combine egg, ricotta cheese, Parmesan cheese, nutmeg, and spinach mixture.
  6. Stuff the cooked jumbo shells with the cheese and spinach mixture.
  7. Cover the stuffed shells with sauce and bake until heated through.
