Ingredients

  • 10 oz chopped thawed spinach
  • 1/2 cup minced onion
  • 1 cup diced Swiss cheese
  • 3/4 cup flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons cold unsalted butter
  • 3 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a bowl, combine the chopped thawed spinach, minced onion, and diced Swiss cheese.
  2. Spread the spinach mixture into the bottom of a deep ten-inch pie plate.
  3. In a food processor, blend the flour, salt, butter, and baking soda until it forms a coarse meal.
  4. Add the eggs, milk, pepper, and nutmeg to the food processor and blend until smooth.
  5. Pour the blended mixture over the spinach in the pie plate.
  6. Bake at 400°F for 40 to 45 minutes or until lightly browned and puffed.
