Ingredients

  • 2 Tbsp margarine
  • 3/4 c chopped onion
  • 2 cloves garlic
  • 2 Tbsp flour
  • 2 oz Parmesan cheese
  • 2 oz shredded cheddar cheese
  • 1 c skim milk
  • 1/2 tsp salt
  • dash nutmeg
  • dash pepper
  • 8 eggs
  • 1 1/2 c cooked and drained spinach

Instructions

  1. Saute onion and garlic in margarine.
  2. Add flour, salt, nutmeg, pepper, and milk; stir and cook until smooth and thick, about 5 to 10 minutes.
  3. Cool the mixture for 5 minutes.
  4. Preheat oven to 350 degrees Fahrenheit.
  5. Beat eggs in a large bowl.
  6. Add the cooled sauce, cooked spinach, Parmesan cheese, and shredded cheddar cheese to the eggs and mix well.
  7. Spray a 9-inch pie pan with non-stick spray and pour in the mixture.
  8. Bake until the top is puffed and browned, about 40 to 45 minutes.
  9. Cool for 5 minutes before serving.
