Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup oil
  • 1 3/4 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cocoa
  • 1 teaspoon cinnamon
  • 2 cups grated zucchini

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking pan.
  2. To make buttermilk, add 1 teaspoon vinegar to milk and let sit for a few minutes until curdled.
  3. In a large bowl, cream together butter, oil, and sugar until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla and prepared buttermilk.
  6. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cocoa, and cinnamon.
  7. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  8. Fold in grated zucchini.
  9. Pour batter into prepared baking pan and smooth the top.
  10. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool before cutting into squares and serving.
