Ingredients

  • 10-inch unbaked pie shell
  • 9 oz. creamed spinach
  • 2 tsp. chopped onions
  • 1/8 tsp. black pepper
  • 1/16 tsp. red pepper
  • 1/16 tsp. nutmeg
  • 4 eggs
  • 1 1/2 c. light cream
  • 1/4 c. crumbled crisp bacon
  • 1/2 c. grated Swiss cheese

Instructions

  1. Bake the pie shell in a 350°F oven until set but not brown, pricking all over with a fork.
  2. While the pastry bakes, prepare the spinach according to package directions.
  3. Allow the cooked spinach to cool slightly in a deep bowl.
  4. Stir in chopped onions, black pepper, red pepper, nutmeg, eggs, and light cream into the spinach mixture.
  5. Pour the filling into the hot pie shell.
  6. Sprinkle crumbled bacon and grated Swiss cheese on top.
  7. Bake at 350°F until a knife inserted comes out clean, approximately 40 minutes.
  8. Optionally, brown the top under the broiler for a few minutes if desired.
