- Bake the pie shell in a 350°F oven until set but not brown, pricking all over with a fork.
- While the pastry bakes, prepare the spinach according to package directions.
- Allow the cooked spinach to cool slightly in a deep bowl.
- Stir in chopped onions, black pepper, red pepper, nutmeg, eggs, and light cream into the spinach mixture.
- Pour the filling into the hot pie shell.
- Sprinkle crumbled bacon and grated Swiss cheese on top.
- Bake at 350°F until a knife inserted comes out clean, approximately 40 minutes.
- Optionally, brown the top under the broiler for a few minutes if desired.
