Ingredients

  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 3 1/2 Tbsp. hot water
  • 5 egg yolks
  • 2 1/2 c. sifted cake flour
  • 2 1/2 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 c. grated carrots
  • 1 c. chopped nuts
  • 5 egg whites

Instructions

  1. Combine salad oil, sugar, hot water, and egg yolks in a mixing bowl.
  2. Beat on low speed of mixer until well blended, being careful not to overbeat.
  3. Sift together cake flour, cinnamon, nutmeg, baking soda, and salt in a separate bowl.
  4. Alternately add the dry ingredients, grated carrots, and chopped nuts to the liquid mixture, blending well after each addition.
  5. In a clean bowl, beat egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the cake batter.
  7. Pour the batter evenly into three 8-inch cake pans.
  8. Bake at 300°F (150°C) for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
