Ingredients

  • 6 oz. seasoned stuffing mix
  • 5 cups sliced squash
  • 1 medium carrot, sliced thin
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 tablespoon minced onion
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Prepare stuffing mix according to directions, reducing water to 1/4 cup.
  3. Spread half of the stuffing in a 2-quart baking dish.
  4. In a large saucepan, cook squash and carrot in a small amount of water for 8 to 10 minutes until tender.
  5. Drain well.
  6. Stir in cream of chicken soup, sour cream, minced onion, and black pepper.
  7. Spoon the mixture over the stuffing in the baking dish.
  8. Top with the remaining stuffing.
  9. Bake for 35 to 40 minutes until thoroughly heated.
