Ingredients

  • 1 lb. fresh mushrooms
  • 1 small onion, chopped
  • 1/2 small green pepper, chopped
  • 2 Tbsp. oil or butter
  • 1 tsp. parsley, chopped
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. water
  • 2 Tbsp. flour
  • 2 Tbsp. cream

Instructions

  1. In a 2-quart saucepan, sauté the chopped onion in oil or butter.
  2. Add chopped green pepper and sliced fresh mushrooms.
  3. Simmer about 5 minutes.
  4. Add paprika, salt, pepper, water, and chopped parsley.
  5. Simmer about 20 minutes.
  6. Make a paste of the flour and cream, then add to the mushrooms.
  7. Simmer about 5 more minutes.
  8. Serve on toast or with mashed potatoes.
