  • 1 1/2 to 2 lb. lamb, cut into large chunks
  • 1 qt. boiling water
  • 1 medium onion, cut up
  • bay leaf
  • 3/4 c. cold water

Instructions

  1. Heat oil in a 4-quart heavy, covered kettle.
  2. Add lamb and minced garlic; cook until the meat is browned.
  3. Add boiling water; cover and simmer for 3 minutes.
  4. Add carrots, sliced celery, chopped onion, potatoes, salt, white pepper, and bay leaf.
  5. Cover and simmer until all ingredients are tender.
  6. Mix flour and cold water into a smooth paste.
  7. Stir the flour mixture into the hot stew and keep stirring until thickened.
  8. Serve garnished with chopped parsley.
