Ingredients

  • 2 oz. unsalted butter
  • 1 onion, finely chopped
  • 2 celery sticks, chopped
  • 4 Tbsp. flour
  • 3 Tbsp. dry white wine
  • 3 c. chicken stock
  • 1 c. milk
  • 4 oz. Blue Stilton cheese, crumbled
  • 2 oz. grated English Cheddar
  • salt and pepper to taste
  • 4 Tbsp. heavy cream

Instructions

  1. Melt butter in a saucepan and add the chopped onion and celery, frying gently for 5 minutes.
  2. Stir in the flour and cook for 1 minute.
  3. Remove from heat, stir in the white wine and chicken stock, then return to heat, bring to a boil, and simmer for 30 minutes.
  4. Add the milk and cheeses, stirring constantly; season with salt and pepper to taste.
  5. Puree the soup in a blender and reheat without boiling.
  6. Stir in the heavy cream and serve with or without croutons.
