  • 2 Tbsp chicken broth
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 Tbsp cornstarch
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Chop chicken into bite-sized pieces.
  2. Sprinkle ground ginger and pepper over chicken.
  3. In a large fry pan or wok, pour oil and heat to high temperature.
  4. Add chicken and stir-fry 3 minutes or until brown.
  5. Push chicken aside and add sliced broccoli and green onion.
  6. Stir-fry 3 minutes more.
  7. Mix together 3/4 cup chicken broth, salt, and sugar; stir into fry pan.
  8. Reduce heat to medium high; cover and cook 2 minutes.
  9. Combine remaining 2 tablespoons chicken broth with cornstarch; stir until smooth.
  10. Stir the cornstarch mixture into the fry pan; cook for 1 minute.
  11. Remove from heat. Stir in grated Parmesan cheese.
  12. Sprinkle with whole wheat croutons before serving.
