Stirred Fruit Cake

Ingredients

  • 1 lb butter or margarine
  • 8 eggs
  • 2 cups self-rising flour
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 pounds cherries
  • 2 pounds pineapple
  • 4 quarts pecans
  • 1 box white raisins
  • 3 teaspoons vanilla

Instructions

  1. Cream sugar, butter, and eggs together and then add flour and spices.
  2. Add cherries, pineapple, pecans, and raisins to the mixture.
  3. Pour batter into two greased long pans and bake at 350°F for 15 minutes.
  4. Remove from oven and stir the mixture.
  5. Repeat the baking and stirring process two more times.
  6. Pack the mixture into a large tube pan lined with greased brown paper.
  7. Return to the oven and bake for an additional 15 minutes.
  8. Let stand for 15 minutes before removing and serving.
