Ingredients

  • 10 oz. frozen strawberries, thawed
  • 2 eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 2/3 cup chopped almonds

Instructions

  1. Beat eggs with a mixer until fluffy.
  2. Add oil and mix.
  3. Add sugar and strawberries and mix.
  4. Sift together flour, cinnamon, and baking soda into a large bowl.
  5. Add the dry ingredients to the berry mixture and combine.
  6. Stir in chopped almonds.
  7. Pour batter into a greased loaf pan.
  8. Bake in a 350°F (175°C) oven for 1 1/4 hours.
  9. Cool on a rack for 10 minutes.
  10. Remove from pan and serve.
