Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 1/2 c. mashed strawberries
  • 1 c. mashed bananas
  • 1 Tbsp. grated orange rind
  • 1 c. vegetable oil
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 c. chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine eggs, sugar, strawberries, bananas, orange rind, and oil in a mixing bowl.
  3. Beat at medium speed for 2 minutes.
  4. In a separate bowl, mix flour, baking soda, cinnamon, salt, and nutmeg.
  5. Add dry ingredients to the wet mixture and stir just until moistened.
  6. Stir in chopped walnuts.
  7. Pour batter into two greased 5 x 9-inch loaf pans.
  8. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
