Ingredients

  • 2 lb. beef round steak
  • 4 oz. American cheese, shredded
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/4 c. parsley
  • 1/4 c. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. cooking oil
  • 1 (10 1/2 oz.) can condensed beef broth
  • 1/2 tsp. dry mustard
  • 2 Tbsp. flour

Instructions

  1. Cut the beef round steak into 6 serving-sized pieces.
  2. Pound each piece to 1/4-inch thickness.
  3. Combine shredded American cheese, chopped onion, chopped celery, and parsley to make the cheese mixture.
  4. Place about 1/4 cup of cheese mixture in the center of each steak piece, reserving about 1 cup of cheese mixture.
  5. Roll up each steak jelly roll fashion and secure with wooden picks or string.
