Stuffed Cabbage Rolls(Golabki)

Savory stuffed cabbage rolls feature tender cabbage leaves filled with seasoned meat and rice, simmered in a rich tomato sauce for a comforting and hearty meal.

Ingredients

  • 1 head cabbage
  • 1 1/2 lb ground chuck
  • 1/2 lb ground pork
  • 1 1/2 cups cooked rice
  • 1 small onion, chopped
  • 2 Tbsp oil
  • 2 cans tomato soup
  • 1 can water
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp. white vinegar (stir this into tomato soup)

Instructions

  1. Cut the core out of the cabbage.
  2. Put the cabbage into a large kettle of boiling water over high heat.
  3. With tongs, remove leaves as they wilt, about 5 minutes.
  4. Drain the cabbage and let the leaves stand until cool enough to handle.
  5. Carefully cut out the thick center vein from each leaf.
  6. Chop the remaining cabbage and set aside.
  7. Saute the chopped onion in oil until translucent.
  8. Parboil the cabbage leaves as per directions.
  9. Mix ground chuck, ground pork, cooked rice, sautéed onion, salt, and pepper well.
  10. Fill each cabbage leaf with the meat mixture and roll. Secure each roll with a toothpick if needed.
  11. Line the bottom of a large pot with some chopped cabbage and place the cabbage rolls on top.
  12. Mix two cans of tomato soup with one can of water and pour over the rolls.
  13. Top with the remaining chopped cabbage.
  14. Bring to a boil, then cover and simmer for 1.5 hours.
