Oriental-style stuffed hens feature fragrant rice, water chestnuts, mushrooms, and green onions, offering a flavorful, elegant main dish perfect for special occasions or family dinners.

Ingredients

  • 4 Rock Cornish hens
  • 1/2 cup diced celery
  • 1/2 cup sliced green onions
  • 2/3 cup sliced water chestnuts
  • 1 tablespoon soy sauce
  • 1 package long grain and wild rice
  • 1/3 cup chopped mushrooms, drained
  • 4 tablespoons melted butter

Instructions

  1. Cook rice mix according to package directions.
  2. Cool the cooked rice.
  3. Add diced celery, sliced green onions, sliced water chestnuts, chopped mushrooms, and soy sauce to the rice.
  4. Toss lightly to mix all ingredients.
  5. Salt inside of each hen, then stuff lightly with the rice mixture.
  6. Truss the hens.
  7. Roast, breast-side up, in a shallow roasting pan at 375°F (190°C).
  8. Baste occasionally with melted butter.
  9. Roast until golden brown and the joints move easily, about 1 1/4 hours.
