Stuffed Rolled Chicken Breasts

Juicy stuffed chicken breasts filled with savory mushroom and onion mixture, baked in a creamy mushroom soup sauce, perfect for hearty family dinners and special occasions.

Ingredients

  • 6 boned and skinned chicken breasts, halved
  • 1 cup mushrooms, chopped
  • 1 cup onion, chopped
  • 2 tablespoons butter
  • 3 cups seasoned stuffing mix
  • 1 cup hot water
  • 1 teaspoon instant chicken bouillon
  • 1 can (10 1/2 oz.) cream of mushroom soup
  • 1 cup sour cream
  • Paprika

Instructions

  1. Saute onion and mushrooms in butter.
  2. Add bouillon, hot water, and stuffing mix; mix well. Set aside.
  3. Lightly pound chicken breasts so they lay flat.
  4. Place some stuffing on each breast and roll up around stuffing.
  5. Place breasts, seam side down, in a 1 1/2-quart casserole.
  6. Place remaining stuffing along side of breasts.
  7. Mix sour cream and cream of mushroom soup well.
  8. Pour the mixture over the rolled chicken breasts.
  9. Sprinkle with paprika.
  10. Cover tightly and bake about 35 to 40 minutes in a 350°F oven.
