Ingredients

  • 6 egg whites
  • 1 cup vegetable oil
  • 2 cups pumpkin
  • 2 teaspoons soda
  • 1 teaspoon cinnamon
  • 1 1/2 cups raisins
  • 8 teaspoons powdered sweetener
  • 1/2 cup water
  • 3 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 1 1/2 cups chopped dates
  • 1 1/2 cups nuts
  • 1 1/2 teaspoons baking powder

Instructions

  1. In a blender, combine water, liquid from pumpkin, and vegetable oil.
  2. Add chopped dates and let stand for 30 minutes or longer.
  3. Blend the ingredients until smooth.
  4. Gradually add nuts, raisins, and egg whites, blending after each addition.
  5. Pour the mixture into a large mixing bowl and add the remaining ingredients.
  6. Mix thoroughly until well combined.
  7. Pour the batter into a greased baking pan.
  8. Bake at 250°F (120°C) for 75 minutes or until a toothpick inserted in the center comes out clean.
