Ingredients

  • 1 cup canned pumpkin
  • 3/4 cup Sugar Twin (sugar substitute)
  • 1/2 cup Sugar Twin (brown sugar substitute)
  • 2 eggs
  • 1/2 cup cooking oil
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 cup oats
  • 1/4 cup water
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9 x 5-inch loaf pan.
  2. Combine canned pumpkin, Sugar Twin, brown sugar substitute, eggs, and cooking oil in a bowl. Mix well.
  3. In a separate bowl, mix flour, baking soda, ginger, allspice, cinnamon, and oats.
  4. Stir the dry ingredients into the pumpkin mixture, then add water and raisins. Mix until combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from oven, wrap, and refrigerate before serving.
