Ingredients

  • 3 Tbsp. butter or margarine
  • 1 1/2 lb. ground beef
  • 1/2 tsp. ground oregano
  • 1 medium onion, minced
  • 1 garlic clove, minced
  • 1/2 c. chopped green pepper
  • 4 c. raw corn, cut off cob
  • 2 c. peeled, chopped fresh tomatoes or canned tomatoes
  • 2 tsp. Worcestershire sauce
  • 1 tsp. sugar
  • dash of freshly ground pepper
  • salt to taste

Instructions

  1. In a large skillet, melt butter or margarine over medium heat.
  2. Add minced onion and garlic; cook until softened.
  3. Add ground beef and cook until browned.
  4. Stir in ground oregano, green pepper, sugar, salt, and freshly ground pepper.
  5. Add chopped tomatoes and cook until slightly thickened.
  6. Stir in raw corn and Worcestershire sauce.
  7. Add tomato sauce or a small amount of water as desired to adjust consistency.
  8. Simmer the stew for about 15-20 minutes, stirring occasionally.
  9. Serve hot, garnished with additional herbs if desired.
