Sunshine Fruit Bars combine oats, dried fruit, and warm cinnamon for a wholesome, portable treat that offers a burst of citrus flavor, perfect for snack time or picnics.

Ingredients

  • 1 1/2 cups quick or old-fashioned oats
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup orange juice
  • 1/4 cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 (6 oz.) package diced dried fruit mix

Instructions

  1. Preheat oven to 375°F.
  2. Lightly grease or spray a 13 x 9 x 2-inch baking pan.
  3. Combine all ingredients in a large bowl.
  4. Fold in the dried fruit mix.
  5. Spread the mixture evenly in the prepared pan.
  6. Sprinkle with 2 tablespoons oats on top.
  7. Bake for 20 to 25 minutes.
  8. Allow to cool before cutting into bars.
  9. Cut into 20 bars.
  10. Bars may be frozen for later storage.
