Ingredients

  • 3/4 cup creamy peanut butter
  • 1/2 cup shortening
  • 2 1/4 cups firmly packed brown sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup flaked coconut
  • 1 cup chopped roasted peanuts

Instructions

  1. Cream the peanut butter and shortening; gradually add sugar, beating well.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.
  4. Stir in vanilla.
  5. Pour batter into 3 greased and floured 9-inch round cake pans.
  6. Bake at 350°F (175°C) for 18 to 20 minutes or until a wooden pick inserted in the center comes out clean.
  7. Cool in pans for 10 minutes; remove from pans and cool completely on wire racks.
