Ingredients

  • 3/4 cup shortening
  • 2 1/2 cups self-rising flour
  • 1 egg
  • 1 teaspoon vinegar
  • 1/2 cup cold water
  • 3 to 4 medium sweet potatoes
  • 1 1/2 cups reserved sweet potato liquid
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 pound margarine or butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups milk
  • 3/4 cup sugar

Instructions

  1. Using the first five ingredients, make pastry by cutting shortening into the self-rising flour with a pastry blender.
  2. Beat the egg, pour into a cup, and add the teaspoon of vinegar and half a cup of cold water; mix well.
  3. Roll out the dough to 1/4 inch thickness.
  4. Line an 8 x 8-inch baking dish with the pastry.
  5. Sprinkle the pastry with 2 teaspoons of sugar.
  6. Place the boiled sweet potatoes in the dish, layering with brown and white sugar, and dot with margarine or butter.
  7. Sprinkle cinnamon and nutmeg over the potatoes.
  8. Pour 1 1/2 cups of the reserved sweet potato liquid over the ingredients.
  9. Cover with a thin crust of dough.
  10. Bake at 400°F for approximately 12 to 15 minutes until slightly brown.
  11. Remove from oven, brush the top with melted butter or margarine, and return to the oven to continue browning.
