Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. milk
  • 1 (3 oz.) pkg. cream cheese, cubed
  • 1/2 c. shredded processed Swiss cheese
  • 4 c. frozen loose-pack hash brown potatoes, thawed
  • 1/4 c. fine dry bread crumbs

Instructions

  1. Melt 2 tablespoons of butter in a saucepan.
  2. Blend in flour, salt, and pepper.
  3. Add milk and cook, stirring until bubbly.
  4. Add cream cheese and shredded Swiss cheese, stirring until melted.
  5. Stir in the thawed hash brown potatoes.
  6. Turn the mixture into a 10x6x2 inch baking dish.
  7. Cover and bake at 350°F for 35 minutes.
  8. Mix remaining butter with dry bread crumbs and sprinkle around edges of the casserole.
  9. Bake uncovered for an additional 10-15 minutes until golden.
