Swiss Steak Stew

Ingredients
- 4 large potatoes, cut in cubes ⓘ
- 2 cups sliced carrots
- 1 cup sliced celery ⓘ
- 1 green pepper, cut in 1/2-inch cubes ⓘ
- 1 large onion, chopped
- 1 cup mushrooms, fresh or canned ⓘ
- 1/4 cup margarine ⓘ
- 1 (13 oz.) can Swiss Steaks ⓘ
- 1 teaspoon cornstarch ⓘ
- 1 cup cold water ⓘ
- 1 envelope G. Washington broth ⓘ
Instructions
- Saute potatoes, carrots, celery, green pepper, onion, and mushrooms in margarine in a large skillet or Dutch oven until barely tender.
- Add the Swiss Steaks and G. Washington broth to the vegetables.
- Dissolve cornstarch in cold water and add to the mixture.
- Simmer for 5 to 10 minutes until the stew thickens.
- Season to taste and serve.
