  2. Combine the drained bulgur with chopped parsley, tomatoes, green pepper, cucumber, green onions, and minced mint leaves in a large bowl.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad ingredients and toss until well coated.
  5. Chill the salad before serving.
