Taco Stack Up Salad Recipe
Ingredients
- 1 pound grnd beef ⓘ
- 3/4 c. water ⓘ
- 1 1/8 ounce. pkg. Durkee taco seasoning ⓘ
- 1 1/2 quart. bite size pcs mixed salad greens ⓘ
- 12 ounce. can whole kernel corn, well liquid removed ⓘ
- 16 ounce. can kidney beans, well liquid removed ⓘ
- 1 c. taco or possibly picante sauce ⓘ
- 3 green onions, sliced ⓘ
- 3/4 c. (3 ounce.) shredded Monterey Jack cheese ⓘ
- 1 c. lowfat sour cream
- 1/2 c. mayonnaise
- 1 teaspoon Durkee chili pwdr ⓘ
- 2 teaspoon Durkee red warm cayenne pepper sauce
- 3/4 c. (3 ounce.) shredded Cheddar cheese ⓘ
- 1 med. tomato, minced ⓘ
- 1 avocado, peeled and sliced (optional) ⓘ
Instructions
- Prepare taco seasoning according to package directions.
- Chill.
- In a large salad bowl, layer salad greens, corn, kidney beans, taco sauce, green onions, Monterey Jack cheese and cooled taco meat mix.
- Combine lowfat sour cream, mayonnaise, chili pwdr and warm sauce.
- Pour over salad; sprinkle with cheese.
- Cover and chill till serving time.
- Garnish with tomatoes and avocado.
- Arrange tortilla chips around edge of salad and serve.
- Makes 4-6 servings.
