Ingredients

  • 6 Idaho potatoes, pared and sliced thinly
  • 1/2 lb. mushrooms, sliced
  • 2 cups light cream
  • 1/4 cup scallions
  • 2 cloves garlic, minced
  • 2 Tbsp. sherry or vermouth
  • 1/2 tsp. salt
  • 1/2 tsp. parsley
  • 1/2 tsp. white pepper
  • 1/4 tsp. nutmeg
  • 1/3 cup butter
  • 8 oz. (2 cups) Gruyere or Swiss cheese

Instructions

  1. Alternately layer sliced potatoes, sliced mushrooms, and 1 1/2 cups of cheese in a lightly buttered 9 x 13-inch glass baking dish.
  2. Combine light cream, parsley, scallions, minced garlic, sherry or vermouth, salt, white pepper, and nutmeg.
  3. Pour the cream mixture over the layered ingredients.
  4. Sprinkle with 1/2 cup of the remaining cheese and dot with butter.
  5. Cover with foil and bake at 375°F for 45 minutes.
  6. Remove foil and bake for an additional 25 minutes, until potatoes are tender.
  7. Let stand for 5 minutes before serving.
