Ingredients

  • 2 c. whole wheat flour
  • 1 1/2 c. wheat bran
  • 1/2 tsp. salt
  • 1 1/4 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1 Tbsp. grated orange rind
  • 1 apple, chopped
  • 4 ripe bananas, mashed
  • 1 c. raisins
  • 1 c. chopped raisins
  • 2 eggs, beaten
  • 1/3 c. honey
  • 1/2 c. molasses
  • 2 Tbsp. cooking oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients: whole wheat flour, wheat bran, salt, baking soda, and nutmeg.
  3. Add grated orange rind, chopped apples or mashed bananas, raisins, and chopped raisins to the dry mixture.
  4. In a separate bowl, beat eggs and then stir in honey, molasses, cooking oil, and vanilla.
  5. Combine wet ingredients with dry ingredients and mix until just combined.
  6. Pour batter into greased muffin tins.
  7. Bake in preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool slightly before serving.
