  • 2 cups peas
  • 2 cups corn
  • 2 cups lima beans or great Northern beans

  5. Add V-8 juice and cook for 30 minutes or until vegetables begin to seem done.
  6. Add corn, peas, and tomatoes last.
  7. Add water or beef bouillon as needed for flavor.
  8. Cook another 30 minutes and let stand for flavor.
  9. Add the cooked beef back into the soup if desired.

Tips & Substitutions

For a richer flavor, consider adding a bay leaf or some herbs like thyme or parsley while boiling the beef. If you're short on time, you can use pre-cooked beef or even leftover roast from another meal, similar to what you might use in Easy Roast Beef And Gravy. Feel free to swap out vegetables based on what's in season or what you have on hand, like using zucchini or bell peppers.

Serving Suggestions

This hearty Ten Vegetable Beef Soup pairs wonderfully with crusty bread or a simple green salad for a balanced meal. For a delightful twist, try serving it alongside a slice of Vegetable Beef Dish for extra flavor. Garnish each bowl with fresh herbs like parsley or cilantro for an added touch.

Storage & Reheating

Store any leftover soup in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stove over medium heat, adding a splash of water or broth if it thickens too much. You can also freeze the soup in portions for up to 3 months; just thaw and reheat before serving.

Frequently Asked Questions

Can I use other types of meat for this soup?

Yes, you can use other cuts of beef, such as chuck roast, or even ground beef if you prefer a different texture. Just ensure the meat is cooked thoroughly before adding it to the soup. For a lighter option, you might try using chicken or turkey.

How can I make this soup vegetarian?

To make a vegetarian version, simply omit the beef and replace the broth with vegetable broth. You can add more beans or lentils for protein and adjust the vegetables to your liking. This will still deliver a hearty and delicious soup experience.

What can I do if my soup is too salty?

If your soup turns out too salty, you can add diced potatoes to absorb some of the saltiness. Cook them in the soup until tender, then remove them before serving. Alternatively, adding a splash of vinegar can help balance the flavors.
