Ingredients

  • 8 oz. cream cheese
  • 1 medium onion
  • 4 oz. can chopped green chilies
  • 1/4 cup Parmesan cheese
  • 1/4 cup chicken broth
  • 2 cups cooked chicken, coarsely chopped
  • 1 can green chilies and tomatoes
  • 1/2 pint whipping cream
  • 1 egg
  • 12 corn tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix cream cheese with chopped onion, chopped green chilies, Parmesan cheese, and chicken broth until well combined.
  3. Stir in cooked, chopped chicken and set aside.
  4. Pour green chilies and tomatoes and whipping cream into a blender container.
  5. Add egg to the blender, cover, and blend well until smooth.
  6. Pour some of the cream mixture into a pie plate to use as a dipping sauce for the tortillas.
  7. Dip four tortillas in the sauce and place them in the bottom of a 9 x 14-inch (23 x 36 cm) glass baking dish.
  8. Halve some tortillas if needed to fit well.
  9. Spread half of the chicken mixture over the dipped tortillas.
  10. Layer four more dipped tortillas over the chicken layer.
  11. Spread the remaining chicken mixture over the tortillas.
  12. Top with the remaining dipped tortillas.
  13. Pour the remaining cream sauce evenly over the assembled casserole.
  14. Sprinkle grated Jack cheese over the top.
  15. Bake for 30 to 35 minutes, or until set and bubbly.
  16. Let stand for 10 minutes before cutting into squares.
  17. Serve topped with shredded lettuce and salsa, if desired.
