Ingredients

  • 1 unbaked 9-inch pie shell
  • 1 tsp. chili powder
  • 1 cup (4 oz.) shredded Monterey Jack cheese
  • 1 Tbsp. all-purpose flour
  • 3 eggs
  • 1 1/2 cups half and half cream
  • 1 (4 oz.) can chopped green chilies, well drained
  • 1 (2 1/2 oz.) can sliced ripe olives, drained
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Sprinkle chili powder over the inside of the unbaked pie shell.
  2. Combine shredded Monterey Jack cheese with all-purpose flour and place in the pie shell.
  3. In a bowl, beat eggs and mix with half and half cream, chopped green chilies, sliced ripe olives, salt, and pepper.
  4. Pour the egg mixture over the cheese in the pie shell.
  5. Bake in a preheated oven at 350°F (175°C) for about 45 minutes or until the filling is set and golden.
