Ingredients

  • 1 lb. ground beef
  • 3/4 cup chopped onion
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (15 1/2 oz.) can red kidney beans
  • 1/2 cup quick cooking rice
  • 1/2 cup water
  • 3 Tbsp. chopped green pepper
  • 1/2 tsp. salt
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. garlic salt
  • 3/4 cup shredded American cheese
  • corn chips, crushed

Instructions

  1. In a skillet, cook ground beef and chopped onion until the meat is browned and the onion is tender.
  2. Drain off the fat.
  3. Stir in the undrained tomatoes, red kidney beans, quick cooking rice, water, chopped green pepper, chili powder, salt, and garlic salt.
  4. Reduce heat and simmer covered for 20 minutes, stirring occasionally.
  5. Top with shredded American cheese and cover; heat about 3 minutes or until the cheese melts.
  6. Sprinkle crushed corn chips around the edge before serving.
