Ingredients

  • 1 lb. Texas spaghetti
  • 2/3 c. cider vinegar
  • 1/4 c. safflower oil
  • 3/4 c. chopped celery
  • 3/4 c. chopped green pepper
  • 8 chopped green onions
  • 2 oz. jar chopped pimento, drained
  • 4 dashes Worcestershire sauce
  • 2 Tbsp. picante sauce
  • 4 dashes Tabasco
  • 2 Tbsp. chopped green chilies
  • 1 tsp. salt
  • 1 1/2 tsp. pepper
  • 2 c. black-eyed peas, cooked and drained
  • 1 1/2 c. corn

Instructions

  1. Cook the Texas spaghetti according to package instructions, then drain and rinse with cold water.
  2. In a large mixing bowl, combine cider vinegar, safflower oil, Worcestershire sauce, picante sauce, Tabasco, chopped green chilies, and salt and pepper. Mix well.
  3. Add the cooked spaghetti, chopped celery, chopped green pepper, chopped green onions, chopped pimento, cooked black-eyed peas, and corn to the dressing.
  4. Toss everything together until well coated.
  5. Cover and refrigerate for 24 hours to allow flavors to meld before serving.
