Ingredients

  • 1 1/2 cups applesauce
  • 1 1/2 teaspoons baking soda
  • 1 cup raisins
  • 1 cup chopped dates
  • 1 cup chopped pecans
  • 1/2 cup shortening
  • 1 1/3 cups sugar
  • 2 eggs
  • 2 cups sifted cake flour
  • 2 tablespoons unsweetened cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Grease the bottom of a 10-inch tube pan and line it with wax paper.
  2. Grease and flour the lining and the pan; set aside.
  3. Combine applesauce and baking soda; set aside.
  4. Combine raisins, chopped dates, and chopped pecans; set aside.
  5. In a mixing bowl, cream shortening and sugar until light and fluffy.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in vanilla extract.
  8. Gradually add sifted cake flour, cocoa, salt, cinnamon, cloves, and nutmeg, mixing until just combined.
  9. Fold in the applesauce mixture and the fruit and nut mixture.
  10. Pour batter into the prepared tube pan.
  11. Bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
