Ingredients

  • 2 cups flour
  • 4 teaspoons soda
  • 1 teaspoon salt
  • 2 cups bananas
  • 3/4 cup sunflower oil
  • 3 eggs
  • 1/4 cup raisins
  • 1/4 cup dates
  • 1 1/2 cups whole wheat flour
  • 1/4 cup wheat germ
  • 2 teaspoons cinnamon
  • 2 tablespoons lemon juice
  • 1 cup honey
  • 1 cup buttermilk
  • 1/2 cup chopped nuts

Instructions

  1. Mix the flours, wheat germ, soda, salt, and cinnamon in a bowl.
  2. In another bowl, mash the bananas and add lemon juice.
  3. In a large bowl, mix honey and oil, then add eggs and beat well.
  4. Alternately add dry ingredients and buttermilk to the honey mixture, mixing after each addition.
  5. Fold in the mashed bananas, raisins, dates, and chopped nuts.
  6. Pour the batter into two greased 9 x 5 x 3-inch loaf pans.
  7. Bake at 325°F (160°C) for about 1 hour or until a toothpick inserted in the center comes out clean.
  8. Cool in the pans for 10 minutes before removing.
