- Salt and pepper the chicken breasts and place them in a large 11 x 14-inch Pyrex dish.
- Melt the margarine and add chopped onion, chopped bell pepper, chopped pimentos, uncooked rice, cream of chicken soup, cream of celery soup, water, and sliced water chestnuts.
- Pour the mixture over the chicken breasts.
- Bake at 350°F for 15 minutes.
- Reduce the oven temperature to 300°F and continue baking for an additional 1 hour.
- Add grated Cheddar cheese 5 minutes before the dish is done and return to the oven for the last 5 minutes until cheese melts.
