Ingredients

  • 8 chicken breasts
  • salt and pepper
  • 3/4 stick margarine
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 small jar chopped pimentos
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 cans water
  • 1 can sliced water chestnuts
  • 1 cup grated Cheddar cheese

Instructions

  1. Salt and pepper the chicken breasts and place them in a large 11 x 14-inch Pyrex dish.
  2. Melt the margarine and add chopped onion, chopped bell pepper, chopped pimentos, uncooked rice, cream of chicken soup, cream of celery soup, water, and sliced water chestnuts.
  3. Pour the mixture over the chicken breasts.
  4. Bake at 350°F for 15 minutes.
  5. Reduce the oven temperature to 300°F and continue baking for an additional 1 hour.
  6. Add grated Cheddar cheese 5 minutes before the dish is done and return to the oven for the last 5 minutes until cheese melts.
