Ingredients

  • 2 lb. round steak
  • 5 Tbsp. cooking oil
  • 1 large onion
  • 1 lb. fresh sliced mushrooms
  • 1/4 tsp. garlic powder
  • 2 c. bell pepper (green, red, yellow), cut into thin strips
  • 1 can cream of mushroom soup (low-fat)
  • 1 c. water
  • 1/2 tsp. black pepper
  • 1 1/2 tsp. salt
  • 3/4 c. flour

Instructions

  1. Cut the round steak into thin strips.
  2. Sprinkle the meat with salt, black pepper, and garlic powder.
  3. Roll the meat in flour to coat evenly.
  4. Brown the meat slightly in cooking oil, then remove and drain.
  5. Add chopped onions and sliced mushrooms to the pan and cook until softened.
  6. Mix in the cream of mushroom soup and water, stirring well.
  7. Return the meat, mushrooms, and onions to the mixture and simmer for 20 minutes.
  8. Add the bell pepper strips and cook for an additional 5 minutes.
  9. Serve the stroganoff over cooked noodles.
  10. Garnish with parsley, tomatoes, and additional mushrooms if desired.
