Tiny Timmies are soft, moist cookies bursting with pineapple, butterscotch, and nuts, topped with a cherry. Perfect for sweet snacking, parties, or teatime treats.

Ingredients

  • 8 oz can crushed pineapple
  • 1/2 cup margarine
  • 1 cup light brown sugar
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 oz package butterscotch chips
  • 1/2 cup chopped walnuts
  • candied cherries

Instructions

  1. Drain the pineapple, saving the juice.
  2. Cream margarine and light brown sugar together.
  3. Add egg and pour 3 tablespoons of pineapple syrup over it, then beat well.
  4. Add sifted dry ingredients and stir well.
  5. Add pineapple, butterscotch chips, and chopped walnuts, mixing thoroughly.
  6. Drop teaspoonfuls of dough onto a greased cookie sheet, leaving 2 inches of space between each.
  7. Place a candied cherry in the center of each cookie.
  8. Bake at 375°F (190°C) for 10 to 12 minutes.
  9. Cool cookies on a wire rack.
