Ingredients

  • 1 can small crushed pineapple
  • 1 cup firmly packed brown sugar
  • 1/2 cup soft margarine
  • 1/2 teaspoon grated orange rind
  • 1 egg
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch morsels
  • 1/2 cup chopped pecans

Instructions

  1. Drain the crushed pineapple and reserve 3 tablespoons of the syrup.
  2. Cream together the brown sugar, soft margarine, and grated orange rind.
  3. Add the egg and reserved pineapple syrup to the creamed mixture and mix well.
  4. Sift the all-purpose flour, baking powder, and salt together.
  5. Gradually stir the dry ingredients into the creamed mixture.
  6. Add the butterscotch morsels, chopped pineapple, and chopped pecans to the batter and mix gently.
  7. Drop teaspoonfuls of dough onto a greased cookie sheet, spacing them 2 inches apart.
  8. Garnish each cookie with pieces of candied cherries.
  9. Bake at 375°F (190°C) for about 10 minutes or until golden brown.
