- While blender is on, drop in the tofu a quarter pound at a time.
- Blend until smooth.
- Combine the tofu-egg mixture with the spinach and minced onions in a bowl.
- Mix thoroughly.
- Pour the mixture into an unbaked 9-inch pie shell.
- Cover with grated cheddar cheese.
- Bake for 30 minutes.
