Ingredients

  • 1 lb. soft tofu, drained
  • 3 eggs
  • 1 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/8 tsp. pepper
  • 2 small onions, minced
  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 unbaked 9-inch pie crust
  • 1/2 cup sharp Cheddar cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Cook spinach in a small amount of water just long enough to thaw; drain well.
  3. Place eggs, salt, pepper, and nutmeg in a blender.
  4. While blender is on, drop in the tofu a quarter pound at a time.
  5. Blend until smooth.
  6. Combine the tofu-egg mixture with the spinach and minced onions in a bowl.
  7. Mix thoroughly.
  8. Pour the mixture into an unbaked 9-inch pie shell.
  9. Cover with grated cheddar cheese.
  10. Bake for 30 minutes.
