Ingredients

  • 10 oz. package macaroni
  • 1 large onion
  • 2 cloves garlic
  • 1 large green pepper
  • 3 lb. ground beef
  • 1 lb. can tomatoes
  • 1 large can cream-style corn
  • 1 small can ripe olives
  • 3 Tbsp. olive juice
  • 1 lb. sharp Cheddar cheese
  • salt

Instructions

  1. Cook the macaroni in salted water until al dente, then drain and set aside.
  2. Saute chopped onion, garlic, and green pepper in olive oil until wilted.
  3. Add ground beef and cook until browned and no longer pink.
  4. Stir in canned tomatoes, cream-style corn, ripe olives, and olive juice.
  5. Cook together until well blended and heated through.
  6. Add shredded Cheddar cheese and stir until melted and incorporated.
  7. Mix in cooked macaroni until evenly combined.
  8. Transfer to an oven-safe dish and bake at 250°F for additional heating if desired.
