Tomato Beef Skillet Supper

Ingredients

  • 1 1/2 lb. beef sirloin
  • 1 Tbsp. cornstarch
  • 2 Tbsp. cooking oil
  • 3 Tbsp. soy sauce
  • dash of freshly ground pepper
  • 1/2 tsp. ground ginger
  • 1 green pepper
  • 1/4 lb. fresh mushrooms
  • 6 green onions
  • 2 small tomatoes

Instructions

  1. Combine cornstarch, 1 tablespoon of cooking oil, soy sauce, and freshly ground pepper in a bowl to make the marinade.
  2. Add the beef sirloin pieces to the marinade, toss to coat well, and let stand in the refrigerator for several hours.
  3. Drain the beef, reserving the marinade.
  4. In a skillet or wok, cook the beef until browned and cooked through.
  5. Add sliced green pepper, sliced mushrooms, and green onions to the skillet and cook until vegetables are tender.
  6. Add the tomatoes and cook briefly until heated through.
  7. Serve hot, garnished as desired.
