Ingredients

  • 2 Tbsp. butter or margarine
  • 1 medium red onion, sliced
  • 2 small yellow squash, sliced
  • 1 clove garlic, chopped
  • 5 c. canned beef broth
  • 2 oz. day-old Italian bread, cubed
  • 8 oz. refrigerated or frozen meat-filled tortellini
  • 10 oz. frozen chopped broccoli, partially thawed
  • 12 cherry tomatoes, halved
  • salt

Instructions

  1. In a large pot, melt butter over medium heat and sauté sliced red onion until softened.
  2. Add sliced yellow squash and chopped garlic; cook for a few minutes until fragrant.
  3. Pour in canned beef broth and bring to a simmer.
  4. Add cubed Italian bread and cook until slightly softened.
  5. Stir in tortellini and frozen chopped broccoli; cook until tortellini are tender.
  6. Add halved cherry tomatoes and season with salt and ground black pepper to taste.
  7. Thicken the soup as desired; add more broth if thinner soup is preferred.
