Traditional Jam Cake

Ingredients

  • 3 c. sifted all-purpose flour
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 2 tsp. allspice
  • 2 tsp. nutmeg
  • 1 c. (2 sticks) butter or margarine, softened
  • 2 c. brown sugar
  • 6 eggs
  • 1 c. buttermilk
  • 1 c. blackberry jam
  • 1 c. raisins
  • 1 c. walnuts or pecans

Instructions

  1. Grease and flour a 9-inch tube pan or two 9-inch pans.
  2. Start oven at 325° for tube pan or 350° for layer pans.
  3. Combine butter and sugar; beat at high speed until creamy and smooth.
  4. Add eggs, one at a time, beating well after each.
  5. Remove beaters and stir in jam, then sifted dry ingredients alternately with buttermilk.
  6. Stir in raisins and nuts.
  7. Put in prepared pans.
  8. In tube pan, bake 1 1/2 hours.
  9. In layer pans, bake about 35 minutes.
  10. Test near center with toothpick; if it comes out clean, remove from oven.
  11. Cool. Frost with caramel or cream cheese frosting.
