Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 2 cups sugar
  • 1 cup margarine or butter, softened
  • 2 tablespoons honey
  • 6 eggs, separated
  • 1/2 cup milk
  • 2 cups chopped almonds
  • 2 cups chopped dates or figs
  • 2 cups raisins

Instructions

  1. Heat oven to 300°F (150°C).
  2. Grease and flour a 10-inch tube pan.
  3. Mix 1 1/2 cups flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt in a medium bowl.
  4. Beat sugar, margarine or butter, and honey in a large bowl with an electric mixer on medium speed until light and fluffy.
  5. Add egg yolks, one at a time, beating well after each addition.
  6. Alternately add the flour mixture and milk to the egg yolk mixture, beating after each addition until smooth.
  7. Fold in chopped almonds, chopped dates or figs, and raisins.
  8. Pour batter into prepared pan.
  9. Bake at 300°F (150°C) for approximately 90 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pan and serving.
