Ingredients

  • 1 lb. boneless steak or chicken
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. lemon juice
  • 1 Tbsp. water
  • 2 tsp. Dijon mustard
  • 1 tsp. honey
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. pepper
  • 1 medium green or red bell pepper
  • 8 large mushrooms

Instructions

  1. Cut the steak into 1-inch pieces.
  2. Whisk together vegetable oil, lemon juice, water, Dijon mustard, honey, dried oregano leaves, and pepper in a large bowl.
  3. Add chicken, bell pepper, and mushrooms to the bowl, stirring to coat evenly.
  4. Alternately thread the ingredients onto four 12-inch skewers.
  5. Place the skewers on a rack in a broiler pan so that the surface of the meat is 3 to 4 inches from the heat source.
  6. Broil for 9 minutes, turning occasionally to ensure even cooking.
  7. Season with salt if desired before serving.
