Ingredients

  • 1 large trout (2 or 3 lb.) or several small trout (6 to 9 oz.), pan dressed
  • 1 rib celery, chopped
  • 1 medium onion, chopped
  • 4 medium mushrooms, coarsely chopped
  • 4 Tbsp. butter or margarine
  • 1 can (6 1/2 oz.) minced or chopped clams, lightly drained
  • 2 slices white bread, broken into crumbs
  • 2 Tbsp. chopped parsley
  • salt and pepper to taste

Instructions

  1. Cook the celery, onion, and mushrooms in 2 tablespoons of butter or margarine until tender.
  2. Stir in the drained clams, bread crumbs, chopped parsley, salt, and pepper. Moisten with a little reserved clam juice if necessary.
  3. Stuff the cavity of the whole trout with the clam mixture and place on a greased baking pan.
  4. Dot the stuffed trout with the remaining butter or margarine.
  5. Bake in a preheated 400°F oven for 15 to 25 minutes, until the fish flakes easily with a fork.
  6. Garnish with lemon and additional parsley before serving.
