Ingredients
- 1 large trout (2 or 3 lb.) or several small trout (6 to 9 oz.), pan dressed
- 1 rib celery, chopped ⓘ
- 1 medium onion, chopped ⓘ
- 4 medium mushrooms, coarsely chopped ⓘ
- 4 Tbsp. butter or margarine ⓘ
- 1 can (6 1/2 oz.) minced or chopped clams, lightly drained ⓘ
- 2 slices white bread, broken into crumbs ⓘ
- 2 Tbsp. chopped parsley ⓘ
- salt and pepper to taste ⓘ
Instructions
- Cook the celery, onion, and mushrooms in 2 tablespoons of butter or margarine until tender.
- Stir in the drained clams, bread crumbs, chopped parsley, salt, and pepper. Moisten with a little reserved clam juice if necessary.
- Stuff the cavity of the whole trout with the clam mixture and place on a greased baking pan.
- Dot the stuffed trout with the remaining butter or margarine.
- Bake in a preheated 400°F oven for 15 to 25 minutes, until the fish flakes easily with a fork.
- Garnish with lemon and additional parsley before serving.
